Nothing beats homemade muesli

And it’s so easy to make!

Just mix oats-, rye- and/or spelt flakes (about 6 dl), flax seeds (1 dl), sunflower seeds (1-2 dl), shredded coconut (1-2 dl), and some roughly chopped nuts (2 dl). My favorites in muesli are almonds and hazelnuts. You can if you like add 1 dl of brown sugar.

Set your oven at 220 degrees. Mix about 1 dl of water and a couple of tablespoons of a neutral oil and about 2 tbs of honey (skip the honey if you use sugar). Pour over the flake and nut mix and mix around.

Roast in the oven for about 20 min. Keep an eye on the muesli and stir around every now and then as it burns easy. It’s finished when it’s has a nice golden colour.

Allow to cool, then add some dried fruits – whatever you like – sultanas, raisins, cranberries, dried apricots, figs, blueberries…

And voilá! ready to be enjoyed with some nice yoghurt!
